Abstract

The objective of this study was to determine the effect of consuming vitamin D fortified cheese and its effects on strength in the older adult during the winter months in the Northern Latitude (South Dakota). The design of the study was a double-blind randomized trial taken place in from November through April in South Dakota. Subjects, 28 males and 40 females with a mean age of 73.8 ± 7.7 years, whom were randomly assigned in a double blind fashion to vitamin D fortified cheese, placebo cheese or control groups. Exclusion criteria were participants under the age of 60 years, baseline cholesterol concentrations above 240 mg/dL, did not have a chronic disease that affects calcium metabolism, and did not have cancer or diabetes. The intervention was a placebo (3 oz/d for 8wk of regular cheese), treatment (3 oz/d for 8 wk of vitamin D fortified cheese), or control (no cheese). Main outcome measures were the changes in 8 weeks of fasting 25-(OH)D, fasting PTH, and hip and knee flexion and extension strength.
